Avocado hummus toast with scrambled (or poached or fried) eggs is one of the best go-to brunch ideas for any Sunday. Minimal effort with maximum results, this dish takes minutes to pull together and looks just the part of a overpriced avocado toast from a brunch joint. And without the reservations or hour-long line.
This can be even more easily made if you already have hummus in the fridge but if not then start with blending that up.
Think 1-2 pieces of toast and eggs per person. Multiply by the amount of people you're cooking for.
a few heaping spoonfuls hummus
+ 1-2 ripe avocados
+ toast (use your bread of choice)
+ red pepper flakes + parsley (or any other seeds or garnishes you want)
1) In a food processor, blend the hummus and avocado together until smooth and creamy. 2
2) For scrambled eggs: crack eggs into a bowl, season well with salt & pepper, and whisk briskly with a fork until the whites and yolks become 1 uniform color and slightly frothy (about 3 mins.) While you’re doing this, have a pan over a moderate heat, add some butter and as soon as the butter stops sizzling you know the pan is hot enough for the eggs.
3) Add them and then immediately turn the heat down low. Move the pan around and using a wooden or rubber spatula move the eggs until just set.
4) Slather a generous amount of avo hummus on the toast, top with the hot eggs and garnish with fresh parsley and red pepper flakes. Other great garnish: chives, thinly sliced scallion or radish
