A favorite chilly evening meal, this one fills the house with the smell of slow roasting meat and sweet apples. It’s also perfect to serve to a small crowd because it stretches and it cheap to pull together. It takes a while to cook but don’t let that deter you–it does it all on its own so no need to hang around the kitchen while it fills the house with it’s wonderful aroma.
1 rack spare ribs
rosemary, thyme or sage
1) Do your prep: preheat the oven to 325F. Cube the apples, onion and potatoes and lay in the base of a large roasting tray.
2) Generously season the pork on both sides with salt and pepper. Lay on top of the apples, onions, and potatoes (cut in half if needed) before popping in the oven.
3) Cook for 1-1 1/2 hours before removing the tray from the oven and flipping the ribs. Return to oven and cook an additional hour. Remove from the oven again and flip back to the top side and return to the oven for the last 30 mins.Serve immediately. Garnish with fresh herbs (optional)
